  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar (optional for sweet cornbread)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 eggs
  • 1/4 cup melted butter or vegetable oil

Instructions:

  1. Preheat oven to 400°F (200°C). Grease an 8-inch square baking pan or cast-iron skillet.
  2. Mix dry ingredients: In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. Add wet ingredients: In another bowl, whisk together milk, eggs, and melted butter or oil.
  4. Combine everything: Pour the wet mixture into the dry ingredients. Stir until just combined (do not overmix).
  5. Pour and bake: Pour the batter into the prepared pan. Bake for 20–25 minutes, or until the top is golden and a toothpick comes out clean.
  6. Cool and serve: Let it cool slightly. Serve warm with butter, honey, or chili.
