🍗 Mouthwatering Chicken Biryani Recipe
🧂 Ingredients:
For the Chicken Marinade:
- 500g chicken (bone-in preferred)
- 1 cup yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- Juice of 1/2 lemon
- A handful of fried onions (optional)
For the Rice:
- 2 cups basmati rice
- Whole spices: 1 bay leaf, 4 cloves, 2 cardamoms, 1 small cinnamon stick
- Salt to taste
- Water (to boil)
For the Biryani Layering:
- Saffron soaked in 2 tbsp warm milk
- Fried onions
- Chopped coriander and mint leaves
- 2 tbsp ghee or oil
🔥 Cooking Method:
Step 1: Marinate the Chicken
- Mix chicken with yogurt, spices, lemon juice, and fried onions.
- Let it marinate for at least 1 hour (overnight is best for flavor).
Step 2: Cook the Rice
- Wash and soak basmati rice for 30 minutes.
- Boil water with whole spices and salt.
- Add soaked rice and cook until 70% done (firm in the center).
- Drain and set aside.
Step 3: Cook the Chicken
- In a heavy-bottomed pan or biryani pot, heat oil/ghee.
- Add marinated chicken and cook on medium heat until chicken is about 80% done.
Step 4: Layer the Biryani
- Spread half the rice over the chicken.
- Sprinkle some fried onions, mint, coriander, and saffron milk.
- Layer the remaining rice and repeat toppings.
Step 5: Dum Cooking (Steaming)
- Cover with a tight lid or seal with dough.
- Cook on low heat for 20–25 minutes.
- Rest for 10 minutes before serving.

Serve hot with raita, salad, or boiled eggs for a royal meal.
