🍛 Rich and Creamy Butter Chicken Curry Recipe

🧂 Ingredients:

For the Chicken Marinade:

  • 500g boneless chicken (preferably thighs)
  • 1/2 cup yogurt
  • 1 tbsp lemon juice
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • Salt to taste

For the Gravy:

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 large onion (chopped)
  • 2 tomatoes (pureed)
  • 1 tsp ginger-garlic paste
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • 1/4 cup fresh cream
  • 1 tbsp cashew paste (optional for richness)
  • Salt to taste
  • Fresh coriander (for garnish)

🔥 Cooking Method:

1. Marinate the Chicken:

  • Mix all marinade ingredients and coat chicken well.
  • Let it marinate for 1 hour minimum or overnight for best results.

2. Cook the Chicken:

  • Heat 1 tbsp oil in a pan and grill or sauté the marinated chicken pieces until browned and fully cooked.
  • Set aside.

3. Make the Butter Gravy:

  • In the same pan, heat butter and a bit of oil.
  • Sauté onions until golden.
  • Add ginger-garlic paste and cook until fragrant.
  • Add tomato puree and cook until oil separates.
  • Stir in chili powder, cumin powder, salt, and garam masala.
  • Add cashew paste if using and mix well.

4. Finish the Curry:

  • Add cooked chicken into the gravy and simmer for 8–10 minutes.
  • Pour in cream and mix gently.
  • Simmer for 2–3 more minutes and garnish with coriander.

🍽️ Serving Suggestion:

Serve hot with naan, roti, or steamed basmati rice for a delicious, creamy meal.
