Fluffy Buttermilk Pancakes with Warm Caramel Syrup
Ingredients
For the Pancakes:
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups halal buttermilk (or milk + 1 tbsp lemon juice)
- 2 eggs
- 1/4 cup melted butter or oil
- 1 tsp halal vanilla extract
For the Caramel Syrup:
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/4 cup milk or cream
- Pinch of salt
- 1/2 tsp vanilla extract (alcohol-free)
Instructions
1. Make the Pancake Batter:
In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk buttermilk, eggs, vanilla, and melted butter.
Combine wet and dry ingredients just until blended.
2. Cook Pancakes:
Heat a lightly greased skillet over medium heat. Pour 1/4 cup batter for each pancake. Flip when bubbles appear. Cook until both sides are golden.
3. Make Caramel Syrup:
Melt butter in a saucepan. Add brown sugar and milk. Stir over medium heat until smooth and thickened (5–6 minutes). Add vanilla and salt.
